Good food.



In my opinion, food is really important for human survival and it allows us to understand other cultures. One of the things I miss the most from Venezuela is the food; I usually try to cook some Venezuelan dishes, but despite of my efforts the taste of the food still different; at least it makes the cravings disappear. At times like these, I really wish my mom was here with me, because I am pretty sure that I would have yummy Venezuelan breakfasts every morning, but the most important thing is having her by my side.

 My favorite Venezuelan food
Arepas, the most famous food in Venezuela and one of my favorite, also it is super easy to make, definitely something to try out.

Ingredients
  • Poached Chicken
  • 1 pound boneless, skinless chicken breast halves
  • ½ small onion, sliced
  • 1 bay leaf
  • 5 peppercorns
  • ½ teaspoon salt
  • Chicken & avocado salad
  • 1 pound shredded poached chicken 
  • 2 Haas avocados, peeled, pitted, roughly mashed
  • 2-3 tablespoons mayonnaise
  • 1 tablespoon plus 1 teaspoon fresh lime juice
  • ½ red bell pepper, seeds and ribs removed, diced
  • 3 tablespoons finely chopped white onion
  • 3 tablespoons finely chopped cilantro
  • ½ jalapeƱo pepper, seeds and ribs removed, finely chopped
  • 2 teaspoons finely minced garlic (2 medium cloves)
  • ½ teaspoon salt or more, to taste
  • Fresh ground black pepper
  • Arepas
  • 3 cups precooked white corn flour (P.A.N. or Masarepa)
  • 3¼ cups warm water
  • 1 teaspoon salt
  • Oil

Stuffed Cornmeal Balls


Stuffed Cornmeal Balls also known in Spanish as “ Bollos Pelones”, I love it everyone should try it; it is a really popular dish in Venezuela. You will fall in love with this meal as I did. I will show you the recipe and steps, so they are no excuses to try this delicious meal.


This is me trying to make good " Bollos Pelones"




Ingredients
    Stuffing:
    2 tablespoons of corn oil
    1 cup of onion, finely chopped
    3 clove of garlic, crushed.
    ½ cup of green bell pepper, diced
    ½ cup of leeks, sliced (white and pale-green parts only)
    ¼ cup of scallions, sliced
    1 lb. ground beef
    Salt and pepper to taste
    2 tablespoons of tomato paste
    4 tablespoons sweet red wine 
    23 -25 green olives stuffed with red pepper, sliced
    3 tablespoons of capers, drained
    Sauce:
    2 tablespoons of corn oil
    2 cups of onion, chopped into small pieces
    1 can (28 oz) of diced tomatoes
    Salt and pepper to taste
    Dough:
    2 ½ cups of chicken broth, warm
    3 cups of Maseca yellow masa flour
    ¼ cup of corn oil

    8 oz of fresh cheese (queso fresco), crumble (opcional)
